Wedding 3 of 3

I remember my own wedding day - still the happiest day of my life
that I can remember anyway.
I feel so blessed to have had that day.
The night before the wedding, I slept early,
blocking out the crazy family drama that weddings always bring.

That night I chose peace.
Me and my first born growing silently in my belly, we slept as though no-one else mattered.

In the morning, I floated downstairs and through the entire day.
My skin glowed, my morning sickness gave me welcome respite,
I danced and sang songs from the motherland
The sun shone but didn't cause me to break a sweat.
My face hurt from smiling.
Who gets to marry their best friend? Who gets to have all of their dreams come true?
That day, I did.

And as I watch others walk towards their future,
I want to feel happiness but instead I feel dread,
I want to shout 'don't do it!'
But of course, I don't.
That would be long and bitter and wack.

So I try and hold on to my day - that happy day where nothing & no-one else mattered.
Where it was just us against the world,
Standing in front of the congregation, secretly holding hands to calm our nerves,
Going through the fanfare of a wedding ceremony, when we would have been happy to eat chicken and chips and wear trainers and exchange Haribo rings.

Our love was a love of incense and poetry.

But where is it now...?

What happens when incense and poetry isn't enough?
When the unbreakable gets broken?
What happens when it's over?
But no-one wants to hear that at a wedding.

B***** don't kill my vibe.

So I'm glad that I didn't have to go to wedding 3 of 3,
I don't think my heart could take anymore reminiscing.
Instead, I stayed up night after night making a beautiful cake for you.
Calling upon the universe to conspire to make everything perfect for you.
Packaging the dreams of happily ever after in sugar, eggs and flour,
Baking a prosperous future into metal tins lined with parchment paper.

I'm glad that you got to have your day.
I did.

AZ & TOR - Sit Back EP Launch Party


See that gorgeous girl right there? That is my little sister. One half of the duo AZ & Tor (she's AZ). They recently released their first EP on MadTech records called 'Sit Back' which is better than awesome & I'm not just saying that because I'm biased!







The launch party for the EP was held at the Kings Head Members Club down in Hackney & I had the pleasure of making some record themed cakes & cupcakes for the event. The top of that cake is liquorice - you'd be surprised at how difficult it is to find liquorice these days!



Given the fact that my dad & uncle were popular musicians, one of our generation was bound to be musical. That said, it is still a bit strange seeing your little sister doing her grown-up superstar thing! It never ceases to amaze me just how talented she is & every time I see her perform she just gets better. I'm extremely proud & looking forward to seeing them do it big...


Anyways, check out the EP, listen to it, buy it, love it, believe the hype! They are going to be huge... You heard it here first!

Wedding 2/3


Hello!!! So it's another month and another wedding. This time it is the wedding of one of my oldest and dearest friends Antoinette.


The weekend was beyond beautiful & once again, I had the honour of making the wedding cake. 



Unlike my usual wedding cake orders, the only guidance I had was to keep it simple. There was no tasting, no design conversations, very very little. In fact, I don't think I even saw a picture of what she might like. It was perfect! I got to make the cake that I would love to have! :)


Each tier had four layers of vanilla cake sandwiched together with strawberry, blueberry & raspberry flavoured buttercream icing. 


Flavouring buttercream with real fruit is the best thing ever ever ever. You get the flavour and colour naturally, along with tiny pieces of fruit to balance out all the sugar you're eating!


Vanilla Butter Cakes (adapted from Amy Atlas's Sweet Design Book)
Make about 8 quantities for a very deep 6", 8" & 10" cake.


1 stick/ ½ cup (114g) unsalted butter at room temperature
1 cup caster sugar
2 large eggs
1 vanilla pod (the seeds from)
2 cups plain flour
2 teaspoons baking powder
½ teaspoon salt
1 cup whole milk
1. Adjust oven to 350oF/ 180oC/ Gas Mark 4. Beat together the butter & sugar until they are light & fluffy. Scrape down the sides of the bowl, then add one egg at a time along with the vanilla until they are thoroughly combined.
2. Sift the flour, baking powder and salt together in a small bowl. With the mixer on a slow speed add the flour mixture alternatively with the milk. Beat for about 3 minutes until the cake batter is smooth.
3. Divide the cupcake mixture between the cupcake cases and bake for about 17-20 minutes minutes until the a skewer entered into the centre comes out clean.
4. Leave to cool fully before topping with a generous amount of buttercream.


Strawberry Buttercream Icing

200g fresh strawberries (or raspberries or blueberries) crushed
500g icing sugar sifted
185g soft unsalted butter

Cream together the butter and icing sugar until soft and fluffy. Slowly add the crushed fruit until fully mixed.

(The fruit can make the icing a bit watery, especially the blueberries & raspberries so you don't need to crush it as much & keep a close eye as you're adding it).


You might be interested to know that I caught the bouquet AGAIN!!! Anyone would think I planned it!
